Producers: Many small producers handpick and deliver to the Pastores mill, which actually was originally built for a flour mill in the late 1800s.
Process: 100% natural fermentation then fully washed. Sun-dried. Natural fermentation is common with small producers. The bean will have more character than just immediately washed, but if not done properly, it will become rancid. The final sorting of the dried beans are hand-sorted by 100+ experienced women

Flavors: Medium body of milk chocolate, caramel sweetness and slight nuttiness. Has a medium acidity when roasted at medium. Very Similar to Guatemala San Vicente Pacaya because it comes from the same region - grown in the volcanic soils
