Process: Natural (Dry-Processed) The farmers incorporate a 36-48 hour fermentation process in the wet mill and then use raised beds for drying the beans under the sun. The cherries that are unwashed spend 15-21 days drying to ensure they are ready.

Flavors: Because of the coffee bean drying in the sun with the fruit still intact, the fruit pops in this coffee. This roast gives a smooth, creamy mouthfeel, high levels of sweetness with pronounce blueberry and strawberry notes with cocoa finish. Think blackberry jam
Cupping Notes: 1/2021 : Sweet, creamy mouthfeel with a nice blueberry aroma. This coffee has a cocoa finish and prominent blackberry-blueberry tasting notes.
