Ethiopia Guji Shakiso Natural
Region: Shakiso, Guji. The Guji zone is located in the Southern portion of Sidamo, and is named after the Oromo people; a tribe with a long, proud history in coffee production. Coffees from Guji were previously classified as ‘Sidamo’ (a very wide geographical classification encompassing much of central-south Ethiopia), however more recently they have been separated from this classification and recognized for their unique and distinctive cup profiles.
Process: Hand-Harvested, dried on raised African beds using the traditional dry-processed/natural
Roast Level: Medium
Flavors: Because of the coffee bean drying in the sun with the fruit still intact, the fruit pops in this coffee and is sweeter with mild acidity. Medium-bodied with prominent strawberry jam, honey and green tea.
Certification/Giving Back: The washing station not only provides training to farmers to improve coffee growing practices, it also sponsors education in the community by building classrooms for the local school.
Cupping Notes: 6/2021 - Compared the Ethiopia Yirgacheffe Natural & this coffee. The Guji pops of strawberry in aroma & in the cup more so than the Yirgacheffe. It has a clean teal-like finish like the Yirgacheffe and is mild in acidity. Nice medium-bodied, fruity coffee.
