Region: Jinotega. This is the largest coffee region in Nicaragua in the north-east region
Producer: Hacienda La Bastilla. La Bastilla Coffee Estate is a 311 hectare farm in northern Nicaragua about 20km from Jinotega and is surrounded by the natural reserve Cerro Datanli El Diablo, just a few kilometers from Lago de Apanas. This estate cultivates coffee, has its own quality control lab, mills, processes and prepares all of its coffee for export; controlling quality from the start.

Flavors: Smooth, medium-bodied cup with stonefruit and raspberry notes with a clean finish
Cupping Notes: 6/2021 Notes: 2021 vs the 2020: A lot of difference. 2021 does not have any nutty or chocolatey notes. Very developed cup. Bright acidity for a Nicaraguan coffee without being astringent. Smooth mouthfeel with stonefruit acidity and hint of raspberry. A nice clean medium-bodied cup compared to a heavy bodied cup in 2020.
Certification: Rainforest Alliance - The environment is conserved by maintaining efficient use of river water. To prevent pollution, contaminated water is treated in bio-digesters, producing methane gas. this gas is channeled to the kitchen to be used for cooking
Giving Back: Finca La Bastilla creates opportunities for sustainable lifestyle and income through activities including education at the La Bastilla Agricultural Boarding School, providing on-the-job training for students and hosting an ecolodge for visitors who become part of the farm’s activities.
