Ethiopia Guji Shakiso Natural
Region: Shakiso, Guji. The Guji zone is located in the Southern portion of Sidamo, and is named after the Oromo people; a tribe with a long, proud history in coffee production. Coffees from Guji were previously classified as ‘Sidamo’ (a very wide geographical classification encompassing much of central-south Ethiopia), however more recently they have been separated from this classification and recognized for their unique and distinctive cup profiles.
Altitude: 1,600-2,000 meters
Process: Natural (Dry-Processed), dried on raised bed
Roast Level: Medium
Flavors: Because of the coffee bean drying in the sun with the fruit still intact, the fruit pops in this coffee. This roast gives a smooth, creamy mouthfeel, high levels of sweetness with pronounce blueberry and peach with honey sweetness
Cupping Notes: 7/2022: Blueberry is prominent in the aroma. During cupping, blueberry and peach notes with a nice honey sweetness. Bright acidity, light-bodied, smooth & sweet.
